Tomato and Fresh Mozzarella

 

This is one of my favorite ways of eating tomatoes. Although mom loved it as well, this one is inspired by my culinary trips to Italy, where it was served for most lunches and dinners. For me, it’s the difference in texture that I love. Both are sweet but the tomato, if fresh, is crunchy and the mozzarella should be soft, almost creamy. Add to that the tartness of the lemon juice and the aroma of the basil and all at once the flavors come together to make a simple yet delicious salad.
