Saffron Potatoes and Onions

 

I love the versatility of potatoes and the way they absorb the flavors of whatever seasoning you mix them with or sauce you put them in. When I was little the selection of vegetables that were available was not as varied as it is today. My mom would come home with onions, carrots and of course, potatoes. She would do her best to create new recipes with whatever she found. This recipe includes some of the ingredients that she loved to combine with potatoes like; saffron, caramelized onions and raisins.
