Roast Veal with Rosemary
Every so often, but mostly during holidays, we had roast. My Mom usually prepared the veal roast with rosemary and onions. The best moment was when Mom was ready to cut the roast with her electric knife. She would never let me use it, so I hung around hoping she would put it down and I could try cutting the meat and, of course, I also wanted to steal the end cut which was for my dad. I never succeeded.
The caramelized onions at the bottom of the pan were so delicious and the cooked garlic that you would get with each slice boosted the flavor of the meat.
The best part though, was dunking her homemade bread in the sauce. The mix of all the ingredients in one bite was out of this world.
