Potato Omelet

This potato omelet brings back so many memories.  My mom would cut this omelet into tiny slices to make us feel like there was so much of it.  She added caramelized onions and coriander to make it taste sweet like a cake, even though it was a side dish to our Holiday meals. My siblings and I
would be so excited for leftovers, but that was very rarely the case. Obviously.
