Lasagna with Eggplant

 

Although my mom mainly cooked Moroccan food, she loved to make Italian dishes as well. She had a gift, everything she made was always extremely tasty. Take her hairdresser, for example, he would come to our house to cut her hair but did not want to be paid, he wanted her to make her famous lasagna. He loved it so much, but he did not eat cheese, so to accommodate him she put cheese only on ¾ of each layer. She then marked it off by placing toothpicks in that corner, forming a square. That is how we knew it was for him.
