Anyone who has ever grown up in a Moroccan home will tell you that the smell of this dish is almost as important as the taste. There are so many wonderful components that it’s almost like having three or four meals in one. Making every individual plate unique. You can’t talk about “Daf” and not mention the flavors. The fact that it is in the oven for so long enhances the taste of every single ingredient. Mom didn’t make it every week so when she did, we thoroughly enjoyed it. She would prepare it Friday afternoon to have for Saturday lunch. I must mention that every family makes it in their own way. It depends on the region you’re from, family traditions and personal preferences.
