Fennel Salad with Tangerines and Dill

 

Fennel is amazingly fresh and sweet, has a great crunch and makes for the perfect summer salad. I love pairing it with tangerines as they give it a great burst of citrus while also reducing the licorice flavor. Dad loved it so much that we had it almost every week. I’ve found that the best way to enjoy it is to let it sit at least a half hour before eating it. It’s awesome the next day, as well.
