Eggplant and Ricotta

As much as mom cooked in the Moroccan style, she loved to change things up. A great example of that was in her use of eggplant. She not only prepared it in the traditional way but also in ways that were not typical to her family’s style. One of her favorite ways to make eggplant was with cheese, specifically ricotta. She loved the creaminess and sweetness it brought  to any dish she used it in.

Aubergine et ricotta

Autant maman cuisinait à la marocaine, autant elle adorait changer les choses.  Un bon exemple de cela était dans son utilisation de l'aubergine.  Elle l'a non seulement préparé de manière traditionnelle, mais aussi d'une manière qui n'était pas typique du style de sa famille.  L'une de ses façons préférées de faire des aubergines était avec du fromage, en particulier de la ricotta.  Elle aimait l'onctuosité et la douceur qu'il apportait à tous les plats dans lesquels elle l'utilisait.
