Coconut Chicken and Eggplant

 

To say that I love eggplants would be an understatement. It has a magical way of taking on the spices that it is seasoned with while still retaining it’s own distinct flavor. It adds so much richness to any dish. This wonderful vegetable pairs beautifully with chicken. These two ingredients were very present in my mom’s cooking while I was growing up and I loved all the different ways she would prepare them. This dish has a wonderful array of spices which compliment the main ingredients beautifully and adding the creaminess of the coconut milk elevates it to another level.
