Zucchini, Saffron Potatoes with Meatballs

 

There is so much you can do with zucchini and this is just one of the many ways my mom would prepare it. In Morocco, meatball tagine with saffron potatoes is very common and by adding zucchini she made it her own. Cooking it low and slow enhances the flavor of the dish as well as allowing it to fill the house with its wonderful aroma. As an added bonus the meatballs and the zucchini make a great sandwich for lunch the next day.
