Sweet Potatoes with Swiss Chard

My mom was diabetic, which made her an expert at finding a loophole into getting her fix of sweets. Enter one of her favorite recipes: Swiss chard with roasted sweet potatoes.  Because the salt and cayenne pepper caramelized the potatoes by bringing out their sweetness it was like eating candy for her. Genius, and delicious. What started off as sneaky, ended up as an inside joke!
