Saffron Egg Noodles and Lamb Meatballs

 

Egg noodles are yet another great comfort food and a favorite among Moroccans. They can be paired with meat, chicken or fish. They are just as good on their own, as well. Mom would put them in soups or just served them as a side dish. This is my take on a classic. I cooked them in saffron broth and topped them with flavorful lamb meatballs and fresh coriander.
