Rice with Lamb, Coriander and Saffron

 

Leftovers were not only a given in our house but were thoroughly enjoyed. It was a whole new dish with the same delicious ingredients used in a completely different way. Roasts were a staple in mom’s cooking especially when she had guests as they were easy to make and fed a lot of people. She always cooked for an army so there was plenty for one or two more dishes. Her leftover roast was perfect for sandwiches or even minced and added to tomato sauce. One of her favorite ways to use the leftover roast was to mix it in with rice. She would saute the meat with different spices to give it a whole new flavor.
