Potatoes and Green Onions au Gratin

 

Potatoes were a staple in our home and a favorite for my Mom, my sister and me. Since she used them often she would make them in as many different ways as possible. We loved how ever they were offered but mashed was definitely our favorite. The creaminess of the potato, the crunch of the onions and the tang of the cheese was more than we could ask for. It was pure heaven.
