Linguini with Tomato and Eggplant Sauce

Making pasta was always so much fun for my mom. She would get creative by adding whatever was in the fridge, pantry or in season; like eggplant, zucchini, peas, shrimp or calamari.  My friends were so happy to come over for her pasta because it would always be a delicious surprise.
