Lamb with Moroccan Eggplant

Lamb and eggplant are always a great combo and when you add potato it makes for the perfect trio. The tomato and red pepper add wonderful taste as well as a beautiful punch of color. The eggplant is cooked to a jam-like consistency, very similar to Zaalouk (Moroccan Eggplant Salad), so you get some in every bite. Dad loved this one, it incorporated two of his favorite ingredients as well.

Agneau aux Aubergines à la Marocaine

L'agneau et l'aubergine sont toujours un excellent combo et lorsque vous ajoutez des pommes de terre, cela forme le trio parfait.  La tomate et le poivron rouge ajoutent un goût merveilleux ainsi qu'une belle touche de couleur.  L'aubergine est cuite à une consistance semblable à celle de la confiture, très similaire au Zaalouk (salade marocaine d'aubergines), de sorte que vous en obtenez à chaque bouchée.  Papa a adoré cette recette qui incorporait également deux de ses ingrédients préférés.
