Fresh Corn and Tomato Salad

 

I can eat corn everyday. I try to incorporate it in as many different salads as possible and also love it on the cob. When we first arrived in Canada, my mom only used canned but when I was introduced to fresh corn it became one of my favorite summer foods and would go to “corn roasts” every August.
