French Fries Omelet

 

Now I know mom did not invent this but as far as my sister was concerned it was a mom original. She would make it mainly during the week when they could not decide on what to eat or it was getting late and needed something fast. It was a perfect last minute meal; quick, simple and delicious. It’s still one of my sister’s favorite dishes. My sister later found out though, that dad used to make it while he was a fireman in Morocco and taught Mom how to make it because it combined two of his favorite ingredients, potatoes and eggs.
