Stuffed Eggplant

 

This dish is yet another way I love to use eggplant. I’ve incorporated Moroccan spices to give it a unique taste. The simplicity of this dish is also the reason why I love it. Topping it off with mashed potatoes and baking till golden brown is just the icing on the cake. Two of my favorite vegetables in one amazing dish. Who could ask for more?
